I get jealous when bloggers start blogging about fall in October. Down in Dubai, we don’t really get to experience fall. It’s mostly just summer and “winter” over here. And by winter I mean mid-20 degrees Celsius, so really not winter. Perhaps summer with a breeze? The one thing that really does bring the feeling of fall to Dubai though is when pumpkins start flowing out at grocery stores in October. I get way too excited for my own good.
This month I couldn’t wait to get my hands on a butternut pumpkin. I just love those. I usually just cut it up, put it on a roasting tray, drizzle with olive oil & balsamic vinegar and add a dash of salt and black pepper and roast for about 40 mins. Perfection? Yep.
This time around I thought I’d add a little bit to it so I could serve it in bite form at a High Tea party I was catering for. The result? Damn good. There are too many different kinds of breads you could use for the base of these, but I just couldn’t resist getting my hands on these adorable mini pita breads as soon as I saw them at my local bakery. Yes, I am easily impressed.
